How to make Pita Bread

Directions

Dissolve yeast in 1/2 cup lukewarm water, add one tsp sugar, stir and let stand for 10 minutes until frothy.

In a dough mixer combine the flour and salt, mix thoroughly; add the yeasty water and about 1/2 the lukewarm water; mix and gradually add more water and flour until all you have used all the water and flour.

Let the dough mixer knead for 10 minutes or until dough is smooth and elastic.

Put the mixture in an airtight container and let it rise for 1 hour.

When dough has nearly doubled in size, punch down, knead lightly, roll out a “rope” and pinch off handfuls to form into balls about the size of tangerines–between a ping-pong and a tennis ball.
